Cole's named Business of Month

Cole’s BBQ has been named February’s Business of the Month by Fairfield Chamber of Commerce officials. Ben Cooper purchased the existing store in September 2016 from Mark and Irene Cole. Mark’s father, Monte, opened the barbecue joint more than 30 years ago. Cooper still uses the recipes – handwritten by Monte – for his side dishes and famous barbecue sauce.

The restaurant serves a typical barbecue menu with a few twists on old favorites.

“Our most popular dish right now is the brisket grilled cheese,” said Cooper.

Cooper said his business goes through approximately 1,500 to 1,600 pounds of brisket each week. He has packages to feed large crowds and offers specials Monday through Friday.

The restaurant smokes their meats 14 to 16 hours in a second generation wood fire pit from Missouri, where the original pit was manufactured. Mark replaced the pit about 10 years prior to Cooper’s purchase.

Cooper said his biggest pit can hold 40 to 50 briskets, which he seasons with salt and white pepper.

“The salt helps keep the moisture in the brisket,” he explained. “We can keep a consistent temperature on our pits which allows Cole’s to achieve superior barbecue.”
