I was involved in a highly difficult task this weekend. A task which only a very few are truly qualified to perform. It was arduous duty and a tough assignment, but I am ready and willing to fulfill my patriotic duties should I receive a call of this type at any time…..Yes, Sir, I'd do it all again. Oh, I suppose I'd better tell you what this task was, lay it on the line, let you decide if I did the right thing…..I was asked and honored to serve as one of the three Judges for the Annual St. Bernard Catholic Church Rib-Eye Steak Cookoff! Yes, as I said, it was a very tough assignment. Wade Lair ramrodded the deal with Leldon Childs, the good Monsignor of Palestine and myself as the Judges. We judged for presentation and appearance, taste, degree of cooking, juiciness, fat content, grill marks…..You name it. We'd started out on the first entries with three basic qualities….. But, the further into it we got, we had to start adding tie breaking decisions. Oh, it was savage duty. We decided that each bite, strictly in the name of fairness, should come from the dead center…..So, when it was all over, the entrants each received their steaks back, minus a big hole in the middle. In fact, those things didn't have just a big chunk missing out of the middle….. No, they looked like a very well hollowed out watermelon rind in late July after a Family Picnic! Of course, they had all manner of other foods….Gumbo, Sausage on a Stick, Indian food, Asian….But to tell you the truth, after doing all of that serious Rib Eye judging, I didn't eat much of that other stuff for some reason…..No, sir….my eyelids got a little droopy…..Time for a nap, next!

Received a very nice note from Mrs. Nelta Little of Donie in reference to her great grandson (Carson Little) and I sharing a few French Fries together a few weeks back. I am glad that you enjoyed reading about it Grandma Little…. Wish you had been present. You didn't have near the fun out of it that we four adults did, I can assure you!

Until Next Week . . . RALPH BILLINGS
